Tamales are one of the most popular foods throughout Latin America. Sr. Magna will discuss the challenges faced in converting this traditional ethnic food to a shelf stable dish and maintain product integrity during the thermal process. Comali Foods Tamales are hand made and the company had to make many adjustments during the development process to ensure that the product maintain the correct flavor, texture, color, during the entire retort process.

Toray Plastics (America, Inc.) has launched a new line of especially developed directional tear films, that will eliminate laser scoring and perforations in a lamination. AMPAC has just announced the availability of a Retort Pouch with linear tear technology.

Recently, WILD and INDAG, have begun building and operating high speed spouted pouch filling lines for the Capri Sonne and Capri Sun business in Germany and the United Kingdom. These high speed filling lines draw from their heritage of dominating the straw pouch market, but leapfrog current linear technology, being continuous rotary fillers which offer the same smooth reliability as continuous rotary bottle fillers. Until now, they have been closely held for internal use only. A movie of one of these units in full commercial operation will be shown publicly for the first time at this conference.

This course is designed to provide participants with a working knowledge and understanding of the underlying technologies associated with the design, production and use of retort pouches for food products.

THE RETORT PROCESS & DEVELOPMENT OF                                     1:00pm - 2:00pm

Retorting as an important food preservation technique dates to the time of Napoleonic wars in the early 1800's. This first section will review the retort process, why it works, its evolution, limitations and the development of the retort pouch as an alternative to the previously ubiquitous metal can. It introduces the earliest pouch structures, materials and converting processes used to manufacture pouches.

A DEEPER LOOK AT REGULATORY & USE REQUIREMENTS         2:00pm  - 3:00pm

Retort pouches contain foods through intensive thermal processing exposures and are intended to maintain food safety and quality for long shelf life in often harsh storage environments. This section reviews the regulatory requirements that structures must comply with as well as fitness for use criteria and evaluation methods.

From early uses by NASA, retort pouches came 'down to earth' and rapidly expanded in applications. In parallel, from the earliest preferred construction(s), alternative pouch structures have proliferated. This section reviews both the products packed in retort pouches and the widening set of successful structures.

While the retort pouch has matured, innovators in products, sterilization processing and pouch materials continue to move the technology forward. This section provides a glimpse at some of the latest work and some thoughts on what may come next. It also provides a wrap up Q&A and discussion period.  


COURSE INSTRUCTOR - Tim Bohrer.
Tim Bohrer has over 35 years of experience in developing competitive advantages in packaging. After earning BS & MS Chemical Engineering degrees at Michigan Technological University and Purdue University, respectively, he joined the American Can R&D center in Neenah, Wisconsin, with initial assignments in blown film product and process development. He was active in early blown coextrusion film development, designed extrusion screws for new polymers being used, and spearheaded tubular water quench technology selection and licensing activity leading to installation of pilot capability.

In 2003 Tim established Pac Advantage Consulting, LLC, and assists clients in technology and market development activities at all stages of the value chain. He is active in flexible and rigid packaging and his work ranges from shop floor problem solving to strategy development and package sustainability assessments, all aimed at creating competitive advantages for his clients. A member of loPP, SPE and TAPPI, Tim serves on the industrial advisory board for Clemson University's Packaging Science program, is a frequent speaker and contributes to packaging technology books and trade publications. He is a named inventor on 7 issued US patents, numerous foreign equivalents and on multiple pending applications resulting from work done with his consulting clients.

This course will cover all aspects of machine productivity with emphasis on SUP/ SPOUT intervention. Integrated to the course will be a discussion of machine line efficiency coupled with Q.C./ Q.A. procedures. There will also be a discussion of various SUP machinery in the market as to economics vulnerability and to efficiency. All this will be presented in the context of overall productivity. The course will put all the many aspects of SUP/ spouts into the full context of the market. This is a first-over course rendering for all SUP/ spout personnel.

COURSE INSTRUCTOR - John R. Henry CPP
John has 35 years experience in the packaging industry. After serving in the Navy, he has been Manager, Facility Operations with responsibility for engineering, maintenance, equipment purchases and more at Alcon Laboratories PR plant from 1976 to 1985. He owned a business designing, selling, installing and servicing automated packaging, manufacturing and assembly machinery from 1985 to 2007.

John is a certified Packaging Professional (CPP) and has long been active in the Institute of Packaging Professionals (IOPP). He developed and teachers their "Packaging Machinery Basics" course and recently completed the first ever textbook on packaging machinery.

John has published over 24 articles in various in various packaging journals and magazines. In addition to the articles, he wrote the monthly Packaging Matters column for 3 years. John invented and patented a unique bottle for packaging a 2 part product such as hair dye and activator.
